Once the bark is stripped from the tree it is laid out to dry in the heat. During drying, the bark naturally curls. Once dried, it can be cut into sticks or ground into a powder. Cinnamon’s most obvious characteristic is its pungent taste and smell. This is due to the presence of the compound cinnamaldehyde, which makes up around 90% of the oil in the bark.
