Peer-Reviewed Journals
IFST publishes two peer-reviewed journals, which are described below. The two journals are published open access, meaning anybody can access all of the content in the journals at any time, anywhere in the world.
Open access to scholarly materials allows anyone to read, cite, share, and build upon your research. This publication model addresses the growing demand for accessible, open research within the food science and technology community, and allows us to, collectively, accelerate advancements in our field.
All papers published in the journals are free to read online without subscription. All articles accepted for publication will be published open access under a Creative Commons license and will be subject to an article processing charge (APC).
The article processing charge for both journals is £2,000 - IFST members will receive a discount of 20% (£400) on article processing charges.
The journals will endeavour to publish accepted papers irrespective of the authors’ ability to pay. Waivers will be granted to corresponding authors working in developing countries and applications for a waiver from authors in other countries will be considered on a case-by-case basis. International Journal of Food Science & Technology (IJFST) – This leading peer-reviewed journal publishes cutting-edge research on food science, processing, and innovation. Covering topics from food chemistry and microbiology to sustainability and novel technologies, IJFST is an essential resource for academics, researchers, and industry professionals.
Translational Food Sciences (TFS) – Launched in 2025 as an open-access, interdisciplinary journal, TFS bridges the gap between research and real-world applications in the food sector. It features studies that translate scientific advancements into practical innovations, helping to drive progress in food production, safety, and policy.
Books and Technical Publications
Handbook of Microbiological Criteria - We are delighted to announce that an updated and extended version has been published and is now available to purchase as a hard copy or e‐book. This revised and updated version aims to provide guidance to all those involved in producing, using and interpreting microbiological criteria in the food and catering industries. It has been written by professional food microbiologists with experience in food manufacturing and retailing, public health, food examination and government, in consultation with colleagues who are also expert in these fields.
