In this study, Kumar and colleagues aimed to extract lycopene from industrial tomato processing waste (peel) using emerging technologies. Lycopene is a red carotenoid pigment which has gained interest due to its associated beneficial properties such as prevention of cancers and cardiovascular disease. The study looked at incorporating lycopene into an enriched lemon juice beverage.
