Based in Essex, W&H Marriage and Sons Ltd have been using proven techniques passed down through 6 generations. Marriage's has been milling quality flour in Essex for 200 years. At Marriage's they thoroughly inspect each lorry load that arrives at the Mill. QC Technicians test a representative sample in the onsite CLAS approved laboratory for protein content, gluten quality and moisture levels. By checking other parameters like mycotoxins and ergot sclerotia the flour is assured food safe.
What participants will learn:
As part of the tour we will visit the CLAS approved laboratory, review the science which makes bread quality flour including enzyme activity, density/ bushel weight, protein ( gluten ) and moisture. We will also look at modern roller milling plant and have a look at the Victorian stone mill plant which is still used in the traditional way.
Target Audience:
Any IFST Member from a manufacturing, research, testing, regulatory, academic role with an interest in seeing the production and testing of flour.
